Kimonos, located inside the Disney Swan Resort Hotel (Kimonos Information), has excellent sushi. The atmosphere is very pleasing, service is great, and the fish is top quality. I could have eaten the entire boat (see picture above) myself. MMMmmm...here's to top notch Sushi bars!
